Making red wine vinegar isn’t easy, but like wine it could easily become a great hobby.

Some of the best red wine vinegars are so expensive that honing that craft would be well worth it.

I’m not sure you can call this a red wine vinegar recipe, it’s more like a process:

Red Wine Vinegar Recipe Supplies:

  • 1 Crock or Wooden Barrel
  • Several Coffee Strainers
  • 1 cheesecloth or linen napkin
  • 1 Understanding Wife or Husband
  • 1 jar of Mycoderma Aceti (the bacteria used in making red wine vinegar)
  • 4 bottles of wine (not fortified wines like port or sherry) A young Zinfandel, Cabernet or Merlot work best or go crazy and get one of the healthiest wines.
  • 3 – 4 Months Time.

Making The Red Wine Vinegar

Start by dumping the bacteria culture and two bottles of wine into the crock. Cover the crock with the linen napkin or a cheese cloth.

Over a period of three months or so, the wine will ferment and slowly go sour, turning into vinegar. At this stage it is producing pure acetic acid. During this time a hazy, grayish veil will cover the top of the liquid. This is known as The Mother of Vinegar. (Yes, it doesn’t look good).

The Mother will be done and the vinegar ready to strain when it sinks to the bottom. Mother is highly coveted so check your local wine shops to see if anyone else is making red wine vinegar and needs the “starter” Mother. After it has formed and before it has sunk to the bottom, add a glass of wine every couple weeks to the crock.

Once it has sunk to the bottom, strain the vinegar through several layers of coffee filters to remove any particles that remain. Some consume the vinegar at this stage. Others intent on making their own red wine vinegar, will age the vinegar in wooden barrels for up to two years. The longer it ages, the more mellow the red wine vinegar tastes.
